Ingredients

  • 8 oz Semisweet Chocolate
  • 1 cup Sugar
  • 4 Egg yolks
  • 1-1/2 tsp Vanilla Extract
  • 8 oz Cream Cheese (Room temperature, cut into pieces)
  • 1-3/4 cups Whipped Cream (chilled)
  • 1-1/4 cups Espresso
  • 12 oz Pound Cake (cut into 3-1/2 x 1 x 1/2 strips)

Directions

  1. Finely chop chocolate in processor
  2. Set aside
  3. Mix sugar and egg yolks in processor for 30 seconds
  4. Add vanilla
  5. Process until pale yellow color—about 1 minute
  6. Add cheese in batches and blend until smooth
  7. Cover and chill for 1 hour
  8. Beat cream until stiff
  9. Fold into cheese mixture
  10. Cover and refrigerate for 1 hour
  11. Pour espresso into shallow dish
  12. Dip cake strips in espresso, turning to coat all sides lightly
  13. Arrange strips on bottom of dish, smoothing with fingers to mold them together
  14. Sprinkle with ½ chocolate
  15. Top with cheese mixture
  16. Sprinkle remaining chocolate
  17. Cover and refrigerate for at least 2 hours
