Ingredients

  • 1 package Extra Firm Tofu
  • 3/4 cup Flour
  • 1 Egg
  • 1/2 cup Water
  • 1 tsp Cajon Seasoning
  • Seasoned Panko Breadcrumbs
  • 1/2 package Part-Skim Mozzarella
  • Oil for frying
  • Sauce

Directions

  1. Cut Tofu into 8 equal slices, placing them on paper towels with paper towels between them. Place something flat and heavy on top for 30 minutes.
  2. Combine flour, eggs, water, and Cajon seasoning to form a thin batter.
  3. Preheat oil to 350 F and preheat oven to 325 F.
  4. Coat tofu pieces in batter and then in breadcrumbs and place in oil, flipping halfway through and taking out when golden brown on both sides. Place removed pieces on a plate with paper towels to drain some of the oil, placing paper towels between layers as well.
  5. Place the tofu pieces in the dish and add sauce and a slice of mozzarella on each one. Bake for 15-20 minutes.
